Mince half the onion and one carrot in a food processor or on a box grater. In a mixing bowl, combine the ground meat, minced onion and carrot, breadcrumbs, egg, basil, salt, pepper and olive oil. Mix well and form into meatballs.
Prep the Vegetables
Cut the zucchini, potatoes, remaining onion and remaining carrot into large chunks.
