Pan Fried Chicken and Rice with Spinach

A quick beginner friendly dinner with golden pan fried chicken, buttery spinach rice, and a rich flavor boost from a vegetable bouillon cube.

Ingredients
  

  • 500 g chicken breast 1.1 lb
  • 1 tbsp chicken spice mix homemade
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 tbsp olive oil
  • 1 vegetable bouillon cube
  • 50 g spinach 1.8 oz
  • 130 g rice 2/3 cup
  • 250 ml water 1 cup
  • 20 g butter 1.5 tbsp

Equipment

  • 1 Skillet / Stainless steel pan

Method
 

  1. Roughly chop the spinach and set aside.
  2. Bring the water to a boil in a pot. Once boiling, add the salt and the rinsed rice. Add the vegetable bouillon cube for extra flavor. Cook for 10-15 minutes on low heat, following the package instructions for your rice.
  3. Stir in the chopped spinach and butter. Season with more salt if needed. Cook for another 5-8 minutes, then remove from heat and cover with a lid so any remaining water gets absorbed.
  4. While the rice cooks, cut the chicken breast into bite-sized pieces. Season with the homemade spice mix, salt, and black pepper, then mix in 1 tablespoon of olive oil.
  5. Heat a skillet over medium heat and add the remaining olive oil. Add the chicken and pan fry for about 15 minutes, until golden on all sides.
  6. Plate the spinach rice with the pan fried chicken on top, alongside a simple side salad.

Notes

Pro Tip: Adding a vegetable bouillon cube to the rice water gives it a much richer flavor than salt alone. Don't skip it.
