One-Pan Baked Chicken and Potatoes

Ingredients
  

For the vegetables:
  • 500 g potatoes about 3-4 medium
  • 1 large carrot
  • 1 medium onion
  • 1-2 tbsp olive oil extra virgin
  • 1/2 tsp dried parsley
  • 1-2 tsp salt
  • 1/4 tsp black pepper
  • 125 ml water 1/2 cup
For the chicken:
  • 2 chicken thighs
  • 1/2 tsp dried oregano
  • salt to taste
  • black pepper to taste

Equipment

  • 1 Oven-safe baking dish
  • 1 Medium pot for pre-cooking the chicken

Method
 

  1. Preheat the oven to 220°C (430°F).
  2. Peel and cut the potatoes, carrot and onion into large chunks. Place them in a lightly oiled baking dish.
  3. Season the vegetables with 1/2 tsp salt, black pepper and dried parsley. Drizzle with 1-2 tbsp olive oil and toss to coat evenly.
  4. Bring a pot of lightly salted water to a boil. Add the chicken thighs and cook for 30-45 minutes, depending on size, until cooked through.
  5. Carefully remove the chicken from the water. Pat dry, then season both sides with salt, black pepper and oregano.
  6. Place the chicken thighs on top of the vegetables in the baking dish.
  7. Before putting the dish in the oven, pour 125ml (half a cup) of water into the baking dish. This keeps everything moist while it bakes covered and helps the vegetables cook through nicely.
  8. Cover the dish with a lid (or foil) and bake for 30 minutes.
  9. Remove the lid and bake for another 10-15 minutes until the chicken is golden and slightly crispy on top.
  10. Serve warm straight from the dish, with your favorite salad.

Notes

Pro tip: Don't throw away the water you cooked the chicken in. It makes a simple, light homemade chicken broth. Just strain it, add a little more salt if needed, and you have a bonus soup for another day.
