Grandma's Gluten Free Apple Pie

A traditional Serbian apple pie, adapted with healthier ingredients. Grated apples baked between two layers of a simple batter, finished with cinnamon and almonds.

Ingredients
  

  • 1 kg apples, peeled and grated 2.2 lb
  • 2 large eggs
  • 70 g coconut sugar 1/3 cup, packed
  • 50 ml coconut oil 3 1/2 tbsp
  • Juice of 1 lemon
  • 1 tsp vanilla extract
  • 120 g Schar Mix B flour 1 cup
  • 10 g baking powder 2 tsp
  • 1-2 tsp cinnamon for sprinkling over the apples
  • 2-3 tbsp blanched almonds for topping (optional)

Equipment

  • 1 Mixing bowl
  • 1 Hand or stand mixer
  • 1 Box grater
  • 1 Baking dish, approx. 26x18cm (10x7 in), not shallow
  • Parchment paper

Method
 

  1. Preheat the oven to 180°C (350°F). Line the baking dish with parchment paper.
  2. Peel and grate the apples, then set aside.
  3. In a mixing bowl, whisk together the coconut sugar and eggs.
  4. Add the coconut oil, lemon juice and vanilla, and mix until combined.
  5. Add the flour and baking powder, and mix until smooth. The batter will be thin.
  6. Let the batter rest for 5-10 minutes, so the flour has time to absorb the liquid.
  7. Pour half the batter into the prepared baking dish.
  8. Spread the grated apples evenly over the batter, then sprinkle the cinnamon on top.
  9. Pour the remaining batter over the apples.
  10. Sprinkle the blanched almonds on top, if using.
  11. Bake for 30-45 minutes, until the top is firm and baked through. A toothpick should come out mostly clean, though the inside will stay soft from the apples.
  12. Let the pie cool completely before slicing.
